B.A.T. = Bacon Avocado Tomato Sandwich


Whenever I buy a package of bacon, I always end up with several pieces leftover…too many for a single serving, yet not enough to use in most recipes.  Another what-am-I-going-to-do-with-these-leftovers conundrum.  However, there is one meal item that doesn’t care how little or how much bacon you put into it: the sandwich.  Everyone, meet your new favorite sandwich, the BAT.  I always enjoy the classic BLT, but I find the combination of avocado with bacon extremely satisfying.  Feel free to keep the lettuce, then you could call it a BLAT, or TALB, or BALT…okay I’ll stop and get to the part where I show you how to make the sandwich.


4 slices of whole wheat bread
1 medium tomato
4-5 strips of bacon
1 avocado
Red pepper flakes
Salt and Pepper

Preheat oven to 350 degrees.  Line a baking pan with foil then place the bacon strips on the pan.  Bake for 10-15 min. until browned and crispy.  Place bacon strips on a plate with paper towels to drain.

Peel and pit the avocado then mash with a fork with a pinch of red pepper flakes and a sprinkle of salt and pepper.  Thinly slice the tomato.  Toast the pieces of bread.

Assemble the sandwich: spread the creamy avocado mixture onto the toasted bread, top with tomato and bacon.  Slice and serve.
